This five day residential training course is for Lessees that haven’t got a background in catering or cookery. This course is designed to give you the skills and confidence that you’ll need to help manage and develop your food offer.
The course is run twice a year, it is free, and places are limited. The total value of each ‘place’ on the course is over £1000. Accommodation and food is all provided, all delegates need to pay for is travel.
Who is the course for?
The course is for Star Pubs & Bars Lessees, however in exceptional circumstances we can make places available for a senior member of the Lessee’s management team. The person that attends needs to be the person responsible for decisions on menu design, food supplier selection and be responsible for training other members of the kitchen team in the pub/pubs.
What does the course cover?
The content of the course goes right back to culinary skills basics as well as training on some more complex dishes and cookery techniques. The course is totally practical and includes:
- Knife skills and cooking techniques
- Meat and poultry – Beef, pork, chicken, game
- Fish and Shellfish
- Vegetables, pulses, soups and sauces
Each day involves at least 6 hours of practical cookery.
